Tsuyu are light sauces for seasoning sômen and udon, tempura and eggs.
These fine and delicately sweet sauces all contain soy sauce, sugar, mirin and dashi stock. It can be used as it is or diluted in cold water (1/3 tsuyu, 2/3 water).

Our perfect combination : for hot sômen, mix 2 parts tsuyu with 5 parts dashi stock. For simmered vegetables, carrots, turnips, the white part of leeks, use a half tsuyu, half stock mixture. Tsuyu sauce will also perfectly season raw vegetables, grilled fish, scallops, seafood salads, fish tartars and shellfish. It makes a wonderful seasoning for grill meat, carpaccio, steak tartar and others.
