Tsuyu is one of the most popular sauces in Japan. It brings a lot of umami flavor to dishes. Its base mixture, called Kaeshi, is made up of soy sauce, sugar and mirin. It is essential for eating soba, somen and other udon noodles and tempura.

You generally use our concentrated tsuyu a ratio of 1 unit of tsuyu to 3 units of water or stock.
The combination of these flavors influences its umami taste, making it particularly rich and unique. You can really taste the sweetness of the flying fish and it adds a depth to the tsuyu, reinforcing its dashi flavor and it balances the green shiso well. It is a real feat and it is difficult to find a green shiso condiment where you can actually taste the shiso. Seafood reinforces the umami taste but also ruins the freshness of green shiso.
As already mentioned, no chemical materials or products are used. Everything is natural.
The basic ingredients commonly used to make tsuyu are liquid sugar, fermented seasoning, acidulant, etc. These are simple ingredients - sugar, mirin, brewed vinegar.

Our perfect combination : Our tsuyu can be diluted in dashi broth. With its shiso fragrance, it gives off the typical fresh notes of this aromatic plant. The notes are green and bring to mind basil (with touches of mint, parsley and cumin). Shiso flavored tsuyu will also beautifully enhance crudités and hot or cold broths.
It makes a wonderful seasoning for grilled meat, meat and fish carpaccios, steak tartar and others.
