Raz el Hanout is above all a typical blend of spices emblematic of Moroccan cuisine.
Its literal translation is "head of the grocery store" referring to the best spices.
There is no traditional mixture with a specific composition. This mixture is specific to each family which assembles its best spices according to its tastes.
The most complex blends can consist of 20 to 50 ingredients.
However, some spices are essential, such as coriander, cinnamon, black pepper, ginger, turmeric and cumin.
