It appears on the surface of this type of miso during the maturation.
During Kamakura era (1185-1333), Hon Tamari was a basic seasoning.
Nowadays, the tamari is mostly used in the Chubu area, in the center of Japan.
Its taste and texture are thicker and more viscous than koikuchi soy sauce.
Salt content is also reduced. Connoisseurs recommend it for sashimi.

You can also use it for seasoning raw, steamed or grilled fish, white or red meat, vegetables, woks... it also take a beautiful reddish colour once heated.
