We have selected this shio ponzu for its low salt level, its great freshness and its prominent yuzu and sudachi flavours.

We recommend this shio ponzu to bring a bit of spice to salads, fish carpaccios, raw scallops, meat, fish or shellfish tartares.

The producer, Nishimura Shoten, has been making high-quality condiments for more than three centuries.
Nishimura Shoten was established in 1684 (Edo period), in Tamaru, in the Mie Prefecture. Tamaru, the last city on the edge of the Ise region, was very prosperous. In 1619, it became the territory of the Tokugawa family in Kishu (present-day Wakayama and Mie Prefectures).
On the orders of the feudal lord of Kishu, the founder of Nishimura Shoten had to create a workshop to produce soy sauce and miso.
The city of Tamaru is located near the Ise-Jingu Shrine, a strategic area at the crossroads of Ise, Hatsune and Kumano. This helped contribute to Nishimura Shoten’s prosperity as pilgrims to the Ise-jingu and Kumano sanctuaries stocked up as they passed by.
Nowadays, the company still produces shio ponzu, tsuyu and other exceptional dashis. Their fame reaches far beyond Japan's borders.
