Hon Tamari was the basic seasoning used in the Kamakura period (1185-1333).
Hon means 'genuine'. As for Tamari, it is the liquid obtained from the natural fermentation of Hatcho Miso.

As an indication of how rare this Hon tamari NODA MISO is, only 3 to 5 litres are produced per tonne of hatcho miso.

Hon Tamari Noda Miso is thicker and more viscous than Koikuchi soy sauce. The salt content is also lower.

Connoisseurs prefer it for sashimi. Use it to season raw, steamed, grilled fish, white or red meat, vegetables, wok dishes.
Note that it takes on a pretty, reddish colour when heated.
