Kona murasaki soya lees powder is made from the lees generated by the production of soya sauce using the Nidan-Jikomi process or two-stage brewing. The first brewing is traditional: water, soya, wheat, salt and aspergillus oryzae yeast. Then the manufacturer adds a fresh soy sauce that has fermented for at least one year. Finally, rice koji, glucose and rice are added (to homogenize the quality) before alcoholic fermentation.
The result of this double fermentation is a low-salt, soft soy sauce rich in concentrated umami. No taste enhancers or additives. The product is totally natural.

Our perfect combination : you can use it to season red meats, chips, pasta, salad, butter, mayonnaise, wasabi and even seafood, sushi, sashimi, oysters and or ice creams and ganaches.
This powder likes vanilla, chocolate, pralines, red fruits (strawberries, raspberries, blackcurrants), pears, white peaches, melon.
