This Hon Tamari soy sauce appears on the surface of the miso when it is aged naturally, in this case after 18 long months.

It is diluted with water to make it more fluid. It is however still thicker and more viscous than Koikuchi soy sauce.
The salt content is also lower. Hon Tamari was the basic seasoning used in the Kamakura period (1185-1333). Hon means 'genuine'.
As for Tamari, it is the liquid obtained from the natural fermentation of Hatcho Miso.

Our perfect combination : connoisseurs prefer it for sashimi. Use it to season raw, steamed, grilled fish, white or red meat, vegetables, wok dishes. 
Note that it takes on a pretty, reddish color when heated.
