It is exclusively made from the Tajima firefly squid, the highest quality squid in Japan.
It is also made up of selected malt and grain. The wheat and soybeans are grown by farmers working to reintroduce wild storks to Tajima. The storks love this specific wheat and soya.
This full-bodied sauce is used in small quantities and has an extremely rich umami flavor, highlighting the two flavors of the inosinic acid from the firefly squid and the glutamic acid from the soya.

Our perfect combination : Hotaruika Gyosho firefly squid soy sauce is exceptional with sushi and sashimi, brings out the flavor of fish or meat tartars and carpaccios, fried vegetables or shellfish, wok dishes or paellas.
