The sauce is made from malt and selected cereals.
The wheat and soybeans are grown by farmers working to reintroduce wild storks to Tajima. The storks love this specific wheat and soya.
This full-bodied sauce is used in small quantities and has an extremely rich umami flavor, highlighting the two flavors of the inosinic acid from the fish and the glutamic acid from the soya.

Our perfect combination : this soy sauce is exceptional with sushi and sashimi, brings out the flavor of fish or meat tartars and carpaccios, fried vegetables or shellfish, wok dishes or paellas.
