For these soba, matcha green tea powder is directly added to wheat flour and buckwheat before kneading. The common kneading allows to perfume the soba delicately.

The quality of the water used for kneading is very important. Spring water, in this case, is drawn from deep in the vicinity of the workshop, located in Shizuoka Prefecture, near Mount Fuji.
We have selected these soba also for their excellent texture that remains perfect even several hours after cooking.

Our perfect combination : for cold consumption, immerse in boiling water for 4 minutes 30 to 5 minutes depending on the desired texture. At the end of cooking, drain with the strainer and rinse with cold water. By using ice water, your soba will be softer. 
For a hot consumption, plunge in boiling water for 3 minutes to 4 minutes depending on the desired texture. After the end of cooking, drain with the strainer and enjoy immediately by dipping your mouthfuls of soba in a light tsuyu sauce (dried bonito or nature).
