The craftsmen of Chiyo no Sono, after World War II, pledged to continue their efforts to prepare sake each time better.
They sealed this promise by drinking all in an enormous vermilion lacquered cup called "shuhai", hence the name of this sake.
This sake, with its soft texture and subtle umami, reveals hints of orange blossom, nashi, pear, quince, white melon and ripe red apple.
Our perfect combination : it will perfectly pair with creamed pasta, a lobster salad or spring rolls.
We also recommend it for your shellfish cooking: mussels, cockles, clams, sea almonds.
