Our craftman, Koyanagi Farm, is located in the village of Yanagisawa, Nakano-shi, Nagano Prefecture. The city of Nakano is crossed by the Chikuma and Yomase rivers. It is an area composed of fluvial terraces and alluvial cones. Rice grown on these lands is particularly famous. The role of climate is important: temperature ranges are large and precipitation is low. These factors infl uence rice excellence. Rice cultivation in this region is very old. It dates back to the Yayoi period (300 BC-250 BC). It is one of the spearheads of the local agricultural sector.
Our perfect combination : place cooking paper on your stove heated over medium heat and cook for 5 minutes on each side.
Mochi gets colored and softens.
You can enjoy it with soy sauce or a little azuki red bean paste, with some white miso or a mixture of kinako and black sugar, or wrapped in nori seaweed or bacon...
For children and the elderly, it is preferable to cut small pieces in order to swallow safely.
