Since 1989 the amount of land being used for Hinokari rice cultivation has steadily increased. To date, it is the third largest after koshihikari and hitomebore rice.

Hinohikari rice is grown in the west of Japan.

It is a hybrid of koshihikari and koganebare rice.

‘Hino’ means ‘salute’, alluding to the region of Kyushu in ancient times, and ‘hikari’ means ‘sun’. Together, they mean that the rice shines when it has grown.

Hinohikari rice is well known for its rich taste, despite the grain being small. It has a thick and chewy texture.  In Kyushu it is common to eat it on a daily basis and it is popular in restaurants.

When cooking, you need to add a little more water compared with other types of rice, However, when sautéing you need to reduce the amount of water used.
