It grows on tall trees in the tropical forest, in the warm and humid regions of south-eastern Madagascar, where its harvest is carried out by village communities.\u003cbr\u003e\nIt can also be found on the island of Réunion and on Mauritius. It is often confused with the Cubeb. It is even called \"cubèbe du pays\" on Mauritius.\u003cbr\u003e\nOther vernacular names are attributed to it: bétel marron, wild peppervine or betalle. It is a small berry with a small caudal appendage.\u003cbr\u003e\nIt comes in three colours, corresponding to stages of ripening: black, white and red. It is a rare product as harvesting is always difficult and the vines are sometimes inaccessible, being able to grow up to twenty metres in height.\u003cbr\u003e\nIts preparation is very delicate as its water content is very high and the berries are very fragile.\u003cbr\u003e\n\u003cstrong\u003eTen kilos of fresh berries are needed to obtain one kilo of dried spice\u003c\/strong\u003e.\u003cbr\u003e\nThe fruits turn red when ripe and blacken as they dry, like their cousin \"piper nigrum L.\".\u003cbr\u003e\nThis spice from the pepper family is very little known, and even in Madagascar it remains little used. It is found, used fresh, in a few traditional dishes and above all in macerations with different varieties of chilli peppers.\u003cbr\u003e\nThis wild pepper is less potent than black or white pepper.\u003cbr\u003e\nCrush it at the moment of use.\u003cbr\u003e\nA coarse grind allows the aromas to develop to their fullest. Avoid high-heat cooking, which makes it bitter and sharp and causes the most subtle aromas to disappear. Preferably use it on your dish at the moment of serving.
