It grows on tall trees in tropical rainforests, in the warm and humid regions of south-eastern Madagascar, where it is harvested by village communities.\u003cbr\u003e\nIt can also be found on Réunion Island and Mauritius.\u003cbr\u003e\nIt is often confused with Cubeb pepper. It is even called \"cubèbe du pays\" (country cubeb) in Mauritius.\u003cbr\u003e\nOther vernacular names have been attributed to it: bétel marron, wild pepper or betalle.\u003cbr\u003e\nIt is a small berry with a small caudal appendage. It comes in three colours, corresponding to stages of ripeness: black, white and red.\u003cbr\u003e\nIt is a rare product because harvesting is always difficult and the vines are sometimes inaccessible, growing up to twenty metres in height.\u003cbr\u003e\nIts preparation is very delicate as its water content is very high and the berries are very fragile.\u003cbr\u003e\n\u003cstrong\u003eTen kilos of fresh berries are needed to obtain one kilo of dried spice\u003c\/strong\u003e.\u003cbr\u003e\nThe fruits turn red when ripe and blacken as they dry, much like their cousin \"piper nigrum L.\". This spice from the pepper family is very little known and even in Madagascar it remains rarely used. It can be found, used fresh, in a few traditional dishes and above all in macerations with various varieties of chilli peppers.\u003cbr\u003e\nThis wild pepper is less pungent than black or white pepper.\u003cbr\u003e\nCrush it at the moment of use.\u003cbr\u003e\nA coarse grind allows the aromas to develop to their fullest.\u003cbr\u003e\nAvoid high-heat cooking, which makes it bitter and sharp and causes the most subtle aromas to disappear.\u003cbr\u003e\nPreferably use it on your dish at the time of serving.\u003cbr\u003e\nDespite their exuberant aromatic profile, these berries are very easy to use.\u003cbr\u003e\n\u003cbr\u003e\n\u003cstrong\u003eOur perfect pairings\u003c\/strong\u003e: same use as for black wild pepper, but with a warmer result.\u003cbr\u003e\n\u003cbr\u003e\nYou will use it to season your salads, but it also goes well with meats, particularly pork and lamb, as well as white fish. It is exceptional on foie gras. Among vegetables, it has a preference for potatoes. An ideal companion for fresh cheeses, it has a fondness for goat's cheese.
