{"product_id":"sauce-soja-tamari-tsuresoi","title":"Tamari Tsuresoi soy sauce - 200ml","description":"\u003cp\u003eAt our artisan Minamigura, production begins by mixing 1.5 tonnes of steam-cooked soya beans in an enormous wooden vat with half the quantity in water; this is called \"Gobujikomi\".\u003cbr\u003eIn more industrial production, equal quantities of water are used (the Tomizujikomi process), but the flavour is much weaker.\u003cbr\u003eFor the \"Gobujikomi\", the soya beans and water are aged for three years.\u003cbr\u003eThis \"Tamari\" is fermented, aged naturally and at length, has a distinctive flavour, and is entirely natural.\u003cbr\u003eThe role of \"Koji\" in the making of \"Tamari\" is as important as it is for miso (though the type of Koji fungus is different).\u003cbr\u003eThe \"Tamari\", with its very rich and mellow flavour, gradually descends from the vat after three years of ageing and is then harvested.\u003cbr\u003eThis \"Tamari\" is called \"Kibikidamari\".\u003cbr\u003eAlternatively, the miso (a mixture of soya beans, water and salt) is removed from the vat, placed between cloths in layers, and pressed to obtain a tamari called \"Assakudamari\".\u003cbr\u003eLarge companies use a combination of wheat and soya beans in mass production, as the wheat fungus ferments soya beans much more quickly than the natural soya bean fungus.\u003cbr\u003eHowever, only good soya beans grown in Japan, natural salt and pure water are used at Minamigura.\u003c\/p\u003e\n\u003cp\u003eTsuresoi tamari sauce is of the Assakudamari type and has been aged for a minimum of 3 long years.\u003cbr\u003eIt has much more umami and flavour than a standard-quality soy sauce.\u003c\/p\u003e","brand":"MINAMIGURA","offers":[{"title":"200 ml net","offer_id":54111357043021,"sku":"NISTAMIN5","price":7.58,"currency_code":"EUR","in_stock":false}],"thumbnail_url":"\/\/cdn.shopify.com\/s\/files\/1\/0962\/6438\/8941\/files\/TAMIN5-s.webp?v=1782831021","url":"https:\/\/www.nishikidori.com\/en\/products\/tamari-tsuresoi-soy-sauce","provider":"Nishikidori","version":"1.0","type":"link"}
