Only 18 people, united in a guild, continue to produce it.
In the local dialect, "NAGURA" means "place where young fish gather». Locals sometimes come to fish in this bay for fish, clams and seaweed.
The water is drawn from Nagura Bay, 1,500 metres from the shore, in waters rich in corals and seaweed, then simmered in a cauldron to extract the salt, which is then dried in the sun, sometimes in a greenhouse at temperatures reaching 70°C. This final step takes 3 days in summer and more than a month in winter.
The salt is then roasted, preserving its very high mineral content.
We can say that this salt is a coral reef salt, which owes its exceptional flavour to the quality of the water, the seaweed, the marine fauna, the surrounding mangrove forests, and the mountain waters flowing into Nagura Bay.
