{"product_id":"sake-gozenshu-junmai-bodaimoto-nigori-light-nama-13-720-ml","title":"GOZENSHU Junmai Bodaimoto Nigori Light Nama Sake, 13%, 720 ml","description":"\u003cp\u003eThe achievements of the late master brewer Takumi Harada (1931–2007) lie not only in being the first in Japan to revive the ancient “Bodaimoto” method, but also in his relentless pursuit of improving sake quality through continuous refinement, as a pioneer of the modern “Bodaimoto” technique.\u003cbr\u003eIf the current production of GOZENSHU has become a “free and progressive approach to traditional methods”, it is entirely thanks to Ms Maiko Tsuji, Master Brewer (Toji) of Tsuji Honten, who inherited the late master brewer’s philosophy.\u003cbr\u003eFollowing the success of the “GOZENSHU Bodaimoto Nigori Light” sake brewed with Kyōkai Yeast No. 77 in 2025, the Master Brewer perfected the recipe by adopting a new yeast: “Hiroshima LeG-Sō”, cultivated from “Hiroshima Yeast No. 6”, considered to be the oldest preserved strain in Hiroshima Prefecture. The aroma is rich in fruity notes, dominated by malic acid and isoamyl acetate, whilst limiting the formation of DMTS — the main compound responsible for “Hineka” (aged off-flavours) in sake —, which improves resistance to long-term storage and transport. Our artisan believes that this also helps compensate for the inherent weaknesses of low-alcohol unpasteurised sake. Right from the “Shubo” stage, this batch showed a light, refreshing aroma, reminiscent of a lactic acid bacterium beverage where lactic and malic acids intermingle.\u003cbr\u003eIts concentrated, delightful sweet-and-sour flavour, expressed through a slight cloudiness, along with its surprisingly intuitive delicious taste, surpass those of the 2025 edition.\u003cbr\u003eEnhancing umami can be achieved through the synergy of ingredients themselves or by combining them, through preparation methods (drying, salting, fermentation, use of enzymes, etc.), protein denaturation, cooking (speed, degree, surface area, low-temperature cooking, etc.), or even cold curing using acids and enzymes to elevate flavour, etc.\u003c\/p\u003e\n\u003cp\u003eThe culinary world offers infinite possibilities, which is what makes it so fascinating.\u003c\/p\u003e\n\u003cp\u003e\u0026nbsp;\u003c\/p\u003e","brand":"TSUJI Co.
