During the harvest period, it undergoes a cold maceration of approximately 14 days, then is pressed on the last day of the harvest and immediately fermented with wild yeasts, without the addition of sulphur dioxide.\u003c\/p\u003e\n\u003cp\u003eAfter fermentation, the wine is aged in old oak barrels for approximately one year, without the addition of sulphur dioxide. In 2021, weather conditions were favourable and there was virtually no development of noble rot until the eve of the harvest.
