After several years of research and trials, its production resumed under the impetus of the Matsue Way Association and the Yoneda brewery.\u003c\/p\u003e\n\u003cp\u003eIts production method differs from that of classic sakés by the use of a large quantity of glutinous rice, a greater rice-to-mash ratio, and less water. The brewing process, which lasts approximately three months, yields a particularly dense, viscous, sweet and umami-rich saké.\u003c\/p\u003e\n\u003cp\u003eUmami, considered the fifth fundamental flavour, adds depth and balance to food through the natural presence of amino acids and nucleotides. In Japanese cuisine, Izumo Jidenshu is particularly valued as a cooking saké.
