Four times a month, they process nearly 80,000 litres of seawater from the Noto island to produce only 200 kg of sea salt. Every grain of salt carries their love and their message of good health and fine taste.\u003c\/p\u003e\n\u003cp\u003eThe seawater of the Noto island is considered one of the cleanest along Japan's coastline, which encouraged local coastal communities to begin salt production in the 16th century.\u003c\/p\u003e\n\u003cp\u003eThe sea around the Noto Peninsula is animated by an abundant and strong current resulting from the meeting of a warm current and a cold current.\u003c\/p\u003e\n\u003cp\u003eIn the Noto Peninsula, the traditional method of salt production is called Agehama-shiki: salt artisans draw seawater, pour it over sand until it dries out and then concentrates.\u003c\/p\u003e\n\u003cp\u003eOur female artisans craft this salt using a very unique process they have developed themselves. Clean seawater is sprayed onto bamboo blinds, suspended from the ceiling and reaching down to the floor. As the salt water flows down along the blinds, some of the moisture evaporates.\u003c\/p\u003e\n\u003cp\u003eThe collected salt water is sprayed again onto the bamboo blinds. The repetition of this process eventually produces saturated salt water. This is then transferred into a large stainless steel cauldron of approximately 7 feet in diameter and crystallised, over a gentle wood fire, after 48 hours.\u003c\/p\u003e\n\u003cp\u003eLike other Japanese sea salts, Suzu Shio is slightly moist.\u003c\/p\u003e\n\u003cp\u003eThe salt is then introduced into 3-year-old bamboo tubes, which are themselves placed for 3 days in traditional kilns until the bamboo is carbonised.
