These snow crabs are caught in winter, from November to March, in deep waters. They are very popular locally. The male crab is huge and can measure, including legs, up to 80 cm and cost more than 100 € each. Echizen-gani is the sole crab in Japan presented each year to the imperial family. The local population prides itself on being the n°1 in Japan.
They are auctioned every morning or almost.
The flavors of this crab are sweet, its flesh is tender and delicate, stringy as it should be, delicately iodized. Fresh sea crabs, boiled and cooled with water, are juicy and sweet in the mouth.
This ponzu exhales the flavors of this crab wonderfully.
