Toyama, a region rich in snowmelt water, where this black rice is produced, is one of the largest rice-producing regions in Japan. It uses the highest technologies for the production of this exceptional rice.
This black rice flour is suitable for cookies and gluten-free bread. Colorful rice, its consumption is associated with health benefits. Ground slightly coarsely, we appreciate the color and the brown rice appearance.
Mix 10% to 30% buckwheat flour together to make a light purple food product specific to black rice containing anthocyanin. It has a texture specific to brown rice and is rich in minerals such as vitamin B1 and magnesium, and in anthocyanins (polyphenol).
