Utilisations :  

The udon we have are very tasty and rich in sesame. Whole black roasted sesame seeds have been incorporated into the dough with black sesame seeds powder and sesame oil.

The ideal cooking would be "al dente" and you can eat them either hot or cold, with a dashi stock, shredded ginger and chopped spring onion.

Cooking time: 2 minutes in boiling water, then rinse in cold water to stop the cooking.

Nouchi Seimen has been processing sômen, fine Japanese noodles, since 3 generations. Mr. Nouchi always makes the sômen in a traditional way, by hand, in the heart of the famous Shimabara, Nagasaki Prefecture. His mother, the creator of black sesame udon and sômen, married in the Nouchi family who produced noodles in Shimabara, at the foot of Mount Unzen.
In this region, with more than 350 noodle factories, she has tried to offer a new way of tasting noodles, incorporating black sesame as ingredient in the recipes. It took a lot of tests because the production of these sômen had to respect the Shimabara hand draw process.
