To make this pure nectar, eight months minimum fermentation is required.
The fruit flavour is very present and means that this vinegar can be used on both savoury and sweet foods.
This vinegar will be good for seasoning poultry offal salads (liver, heart, gizzards, foie gras) and veal liver, veal or pork chops (deglazing and lacquering at the end of cooking), seared fruit such as apples, pears or strawberries.

Production is extremely limited and rare, and this vinegar is reserved for purists and connoisseurs.
Made from fresh figs natural kobo yeast and acetobacter bacterium.
