The green tea powder is directly added to the wheat flour and buckwheat flour before it is kneaded. The kneading action gently spreads the flavour through the soba.

No dyes, additives, preservatives or flavour enhancers are used.

The quality of the water used when kneading is very important. For these soba, spring water is drawn from deep underground near to the workshop, in Shizuoka Prefecture, near Mount Fuji.

Another reason we have selected these soba is due to their fabulous texture which remains perfect even several hours after cooking.

To prepare: if eaten cold, plunge into boiling water for 4 minutes 30 - 5 minutes depending on the desired texture. At the end of cooking, drain using a colander and rinse with cold water. If you use iced water, your soba will be softer.

To eat hot, plunge into boiling water for 3 minutes 30 - 4 minutes depending on the desired texture. As soon as they have finished cooking, drain using a colander and dip the soba into a light tsuyu sauce (with dried bonito or plain) and eat immediately.
