This nabe broth is made from tasty soy sauce, flavored with kombu and dried bonito, enhanced by the sweetness of mirin and the spicy notes of black pepper and red pepper.

We particularly recommend it for the tasting of chicken thighs with skin.
This broth will also be perfect for pork or poultry sausages, salmon, pork (rind on belly, boneless collar).
As for accompaniment for your broths, favor mushrooms (eryngii, enoki, shiitake), onions, spinach, pumpkins and other cucurbits, potatoes, asparagus, sweet potatoes, green onions, white leeks, carrot strips, Chinese cabbage, tofu.
On the preparation side, shake the sachet well before opening, then place in your cooking container. Bring to a boil, add the meat, then the other ingredients and cook for 5 to 10 minutes.
You can also bring the broth alone to a boil and simply add udon noodles which you will simmer for 3 minutes.
For tasting, add chopped green onion and katsuobushi shavings on top.
