Thanks to its particular abundance of kôji, a mold that grows on rice, it takes on richness from the sugar of the rice. It has rich rice taste and the color is a little bit brownish, as it is fermented for long time, and a subtle spiciness.
It is all made from carefully selected organic ingredients made in Japan.
Against the amount of soy bean, craftsmen are using 1.2 times of rice kôji and it is fermented for over 6 months
