This miso has been aged for 10 long years in wooden barrels and made with the best Niigata rice and the best soya from Hokkaïdo, salted with sea salt.

Its ripening and aging have been possible thanks to a temperature control. and a perfect hygrometry. It is marketed only since 2017, date of the Yamamoto company centenary.
This rather dark miso, however, has a moderate salinity, a deep, rich, unique flavor.

This miso is natural, no additives, no coloring, no preservatives

Our perfect combination : regionally, it is tasted with eggplant or simmered with mackerel.
We also recommend it with shell broths, game meat sauces, or a good miso soup for connoisseurs.
