Usually, mirin manufacturers add sugar during the fermentation process of rice and kôji-rice with cane sugar alcohol to speed up the maturation.
Here, nothing is added (no sugar nore additives).
The production process is slower but the flavors in the end are more natural and pure.
Black mirin is born “by accident”: a few bottles were forgotten for more than 10 years in one cellar. Rice being rich in glucides and amino acids, the mirin oxidate and took a dark color.

Our perfect combination : We recommend this mirin to spice up a Peking duck, quail, young pigeon, or in a reduction with a foie-gras steak.
Also great with vanilla ice cream, mousses and desserts, fruits or jellies.
