The barbecues are made of diatomaceous earth. Diatomaceous earth is a soft siliceous sedimentary rock of natural origin which is very brittle and can easily be crumbled into a fine white to off-white powder. Diatomaceous earth is made from the fossilised remains of tiny aquatic organisms called diatoms. Their skeletons are made of a natural substance called silica. Over many many years, diatoms accumulated in the sediment of rivers, streams, lakes and oceans. In Japan diatomaceous earth is mostly quarried throughout the city of Suzu. This moldable earth has long been used as insulation for items such as stoves. Japanese historical literature mentions a kettle from the Edo period (1603 ~) made of diatomaceous earth.

What are the characteristics of diatomaceous earth?
The Kaginushi diatomite barbecue is made from 100% Oku-Noto (Ishikawa) diatomaceous earth. Diatomaceous earth is porous, ensuring high thermal insulation. In addition, it has a siliceous resistance to heat (good heat resistance). Diatomaceous earth reddens with heat and captures infrared rays.
Cooking with charcoal on this type of barbecue will bring out the maximum umami of the ingredients.

Make-up of the barbecue
The diatomaceous earth barbecues are made of insulating bricks that have been heated to 1000°C. This improves their durability, thermal insulation and weather, frost and humidity resistance. The mechanical strength of the galvanised steel is enhanced and minimises heat leakage. As heat expansion and contraction is absorbed at the joint surface, the reinforcement of the metal fittings is effective.
