The market is full of yuzu powder but it is extremely difficult even impossible to find a product which retains the freshness of yuzu with its green mandarin orange and green grapefruit notes without having an overpowering bitterness or "burnt" note at the end.
It took us more than eighteen months to discover a real marvel in Kochi prefecture.
The yuzu powder we have on offer comes from rapid spray dehydratation of the yuzu juice. Seven and a half litres of yuzu juice are needed to make 1kg of yuzu powder.
Dextrine is added to the powder to prevent any oxidation or deterioration.
It is strong in the mouth with a perfectly balanced acidity an no bitterness giving you a perfect yuzu freshness and flavour.
You'll use it to flavour ganaches, bavarois and mousses, chantilly cream, cakes and tarts, sauces, fish, marinades…
