Asian cuisine has a multitude of oyster sauces, nearly always based on artificial flavors. They are usually very salty.
In Japan oyster sauce takes on a whole new dimension, especially when it is made from delicious Miyagi oysters, deep, fleshy, tasty and very rich in umami.
The taste of the oyster is very present, enhanced by natural iodine and liquorice touches (due to their richness in natural glutamic acid).

Our perfect combination :  it works well on scallop or shellfish salads, small pan-fried cuttlefish, duck breast salad (duck with oysters was very popular over the last two centuries), meat or fish tartars, white fish ceviche, exotic meat, shrimp or other crustacean salads, delicately embellished with mango, pineapple and pear.
