The Shikwasa is a small green lime from the Okinawa archipelago. Its juice is bright yellow, almost milky, and its consistency is quite dense.

It tastes very fresh, with a well-balanced acidity. It has a pleasant bitter scent with the characteristic scents of ripe lemons. Rather than wincing when tasting it, you will have the same reaction as if tasting a tangy sweet or a fresh lemon pie.

Our powder is obtained by atomizing the juice: The juice is subjected to a very high heat for a few seconds so as to remove any moisture and retain only the dry extract in an ultra-concentrated form.

Our perfect combination : the powder obtained, mixed with dextrin, is then used for making panna cotta, creams, flans, sorbets, cakes, ganaches, biscuits, or to flavor vinaigrettes, vegetable salads, grilled fish or mayonnaise.
