The umeboshi from Fukami Umeten have a subtle taste of exceptional quality. No addition of chemical seasoning, colouring or artificial flavouring.  Umeboshi is considered as a healthy food due to its high acidity and citric acid content.

Our umeboshi puree is exclusively made from the Nanko Ume variety, more precisely the one grown in the Nambe region, the most famous.

Fruit ripen on trees and fall naturally on a net above the ground. The fruit are all harvested by hand.  Each one is carefully inspected to ensure that it is not damaged and that there are no foreign bodies. Only the largest, fleshiest ones are selected.

The ume have been immersed in specially filtered water to remove any foreign substances and to soften the flesh. The water is then converted into ionized alkaline water with smaller molecules. This water gives the umeboshi its weak taste. The softened plums are then pureed and packaged in 100g packs and pasteurised at 95°C. There are no other ingredients. The product is natural, free of additives, colourings, preservatives and flavour enhancers.

One of Fukami Umeten's particularities is that they play Mozart as background music in their workshop because, they say, the effect of Mozart's music softens the taste.

The umeboshi puree enhances vinaigrettes, mayonnaises, raw vegetables salads, marinades, and make brown stocks tastier...

It goes very well with fatty meats such as pork (roasted breasts).
