Yamaguchi prefecture is known for its sour natsumikan. It is a citrus fruit with a slightly bitter and acidic juice, somewhere between a bitter orange and a mandarin. The rind contains a lot of pith and it is considered a gourmet food.
It is used frequently by patisserie chefs in Japan.
