Yamaguchi Prefecture is famous for citrus Natsumikan. This citrus expresses a tangy and slightly sour juice. Its bark is very rich in essence and is consumed with greed.
Natsumikan mandarin is widely used by pastry chefs in Japan.
Yuzuya Honten is specialized in the development of Natsumikan bark. She selects the fruits in a drastic way. Only the most beautiful fruits are actually selected, with intact bark, free from blemishes or scab. Only the slices of the upper and lower parts of the fruit are taken, those which in their center still have a white and mellow albedo. The center contains no fruit body. These parts are then delicately comfit in a very light syrup and then packaged stacked in small jars and covered with their syrup.
