ISLE, located in Nagasaki Prefecture has developed a unique system for using vegetables which are impossible to sell on the Japanese market because they are too big, too small or imperfect shapes.
These vegetables, steam-cooked, are then cooled and finely chopped and embellished with a very small amount of agar agar.
The mixture is then spread out and cut into rectangles to form thin sheets.
You can use this vegetarian Japanese daikon radish sheet to make coloured maki or temaki, bringing brightness and colour to your rice, pasta, soups or broths.
