Dashi is an infusion of kombu seaweed, a real foundation of Japanese cuisine.
Its production is an art and demands a certain level of mastery (to create the richest broth in terms of umami) which is the subject of competitions in the land of the rising sun.
Marokon seaweed kombu dashi is very concentrated. It can make up to 50 litres of broth. You can use it as a seasoning, as base, or diluted in your cooking water.
