Ayu is a small freshwater fish of Japan, well-known for the delicacy of its meat. The wild ayu is very rare and is considered a deluxe and expensive product. There is a season for ayu (it can only be fi shed during summer time), it is very rare because, just like the trout in France, it can only live and grow in pure waters. This concentrated dashi is made from wild fermented ayu juice (obtained by zymotic method by using high pressure: fish is fermented by its own enzymes) and organic soy sauce (Japanese soy). Wild ayu used is from Takatsu River (reputed as the purest in Japan). It is fished with the traditional method called "tomogake" : by putting an alive ayu in a fi sh trap, as bait, it will naturally attract other ayu fish which will try to join it.

Our perfect combination : you can use it diluted 1 volume for 5 of water or vegetable stock. This dashi will flavor noodles, pastas, egg custards, tofu… It is also an excellent seasoning for your sautéed vegetables, fried rice, salads, risottos, chawan mushi (variety of Japanese flan)…
