The basic soy sauce, fermented for a minimum of one year, is made exclusively from Tajima firefly squid, the highest quality in Japan.
Its composition also includes selected malted cereals. Indeed, wheat and soy are grown by farmers working to reintroduce the wild stork to Tajima. Storks love this specific wheat and soy.
Our craftsman has added whole berries of Asakura sansho from Yabu City, Hyogo Prefecture, with a powerful fruity aroma of citrus fruits. Asakura sansho fruity and fresh taste combined with the deep flavor of natural brewed soy sauce creates an exquisite balance that did not exist before.
With a full-bodied taste, it is used in small quantities and has an extremely rich umami flavor.

Our perfect combination : sushi and sashimi, fish or meat tartar, various carpaccios, oysters...
