The city of Kamiamakusa is located at the eastern side of the Amakusa Islands, in Kumamoto Prefecture.

Its warm, stable climate, favours the cultivation and harvesting of fruit, vegetables, flowers and rice. Located near the Ariake and Yatsushiro seas, fishing is also abundant.

Local industries, mainly concentrated around agriculture and fishing, however find themselves in a difficult situation, faced with a shortage of, and an ageing workforce. This is leading to a decrease in resources and market prices.

To cope with this situation, an association of producers has specialised in the production of high quality dashi made exclusively from local raw materials.

This dashi is rich in dried fish, seabream, Japanese Hamo moray eel, Kasago rockfish, wakame seaweed and ‘eringi’ mushrooms.

This is an authentic, traditional dashi just like the one Kumamoto fishermen prepare for themselves. It is rich in flavour, umami and has powerful marine notes.

It can be used as a substitute for fish stock or to make a high-quality miso soup, for eating with sômen or udon noodles or to flavour a Japanese omelette.

Each sachet is immersed in 600 ml water and boiled over a medium heat for 3 minutes to obtain full-bodied notes or in 2 litres of water and boiled over a medium heat for 5 minutes for softer notes.

For sômen and udon noodles, you can liven up your dashi made with 600 ml of water by adding 1 tablespoon of mirin and 2 tablespoons of clear soy sauce.
