We recommend this white dashi, diluted, to make miso soups, to season ramen or udon, or undiluted to bring out the flavours of pan-fried vegetables, to season fish and fish or langoustine tartares or even scallops.
Combining dashi with soy sauce, while preserving tradition and adding the latest modern techniques, means we are able to discover the authentic flavours of traditional Japanese cuisine on a daily basis.

Our producer, Nishimura Shoten was established in 1684 (Edo period), in Tamaru, in the Mie Prefecture. Tamaru, the last city on the edge of the Ise region, was very prosperous. In 1619, it became the territory of the Tokugawa family in Kishu (present-day Wakayama and Mie Prefectures).
On the orders of the feudal lord of Kishu, the founder of Nishimura Shoten had to create a workshop to produce soy sauce and miso.
The city of Tamaru is located near the Ise-Jingu Shrine, a strategic area at the crossroads of Ise, Hatsune and Kumano. This helped contribute to Nishimura Shoten’s prosperity as pilgrims to the Ise-jingu and Kumano sanctuaries stocked up as they passed by.
Nowadays, nearly three and a half centuries later, the company still produce authentic soy sauces and tsuyu which are rich in dashi. Their fame reaches far beyond Japan's borders.
Dashi production is hugely increasing. Dashi made from kombu seaweed, dried katsuobushi bonito or small sardines is the basis of much Japanese gastronomy.
