Karaimo Nojo in Kagoshima Prefecture (a region well-known for traditionally growing sweet potatoes in Japan) recently developed a method for extracting natural sugar from sweet potatoes through the saccharification of their starch. The sugar obtained is reduced to a delicious syrup. The sweetness of satsuma imo sweet potato syrup is similar to the rich "Yaki imo", baked sweet potato with tasty starchy sweet potato notes. This syrup is ideal for use in cooking to bring out sauces for meat such as pork, roast chicken, duck or foie gras.
