It is well-loved by chefs and ice cream makers due to both its attractive colour and delicious flavour. Karaimo Nojo in Kagoshima Prefecture (a region well-known for traditionally growing sweet potatoes in Japan) recently developed a method for extracting natural sugar from sweet potatoes through the saccharification of their starch. The sugar obtained is reduced to a delicious syrup. Murasaki imo sweet potato syrup has a subtle, fruity acidity.

Its taste and colour are unique. It goes well with cheeses, sauces for meat (duck, foie gras, pork, poultry), fruit, yoghurt, chestnuts, walnuts, almonds, hazelnuts, ice cream, cocoa and more.
