The fleshy and flavorsome Nanko ume (the most renowned in Japan) plums used for this vinegar, are grown in an exceptional region: Kishu Minabé.
Rigorously selected they are patiently brewed in dark rice vinegar (made with very pure water from the Nachisan mountains in Wakayama) together with sugar candy. The result is a deliciously slightly acid vinegar with surprising cherry, amandon, plum notes.
Our perfect combination : it superbly seasons traditional vinaigrettes. You can reduce it or use it to deglaze.
The Kishu Honjo Umeyoshi story started in 1971 with the elaboration of umeboshi plums (plums macerated in salt) in the prestigious capital of the ume plum: Kishu Minabé ( Wakayama Prefecture ).
