The shallot, macerated simply using heat and humidity, takes on a shiny, black colour, a silky, melting texture, revealing all of its natural sugars. This black shallot goes well with dried or smoked fish, carpaccios, foie gras, scallops, and will enhance your canapés and cold dishes.
