All the power of Kagoshima and Okinawa dark sugar
When a Japanese pastry cook/baker who is also an amateur of taste decides to found a company specialised in the production and sale of natural products based on cane sugar, the result is full of flavour ! In this way Mr Matsuyama, founder of Amami Kyoraumi in 2007, dedicates his know-how to the elaboration of high quality products, more especially based on Kagoshima and Okinawa dark sugar renowned in the bakeries and pastry shops of the whole world.
To make their dark sugar, Amami Kyoraumi master craftsmen apply some rules only they know setting them apart from their competitors. For example, they are the only ones to rinse their fresh sugar canes before processing to rid them of all impurities. The juice extracted after pressing is gently reduced over a wood fire – without adding water, white sugar or syrup, as do most producers! – then left to settle for three to five days. The result is 100% natural, smooth, high in aroma and perfectly healthy.
