Niigata's rice paddies are made of fertile clay soil carried from upstream by large rivers such as the Shinano and Agano Rivers, and they are rich in nutrients necessary for rice cultivation, so there is no need to use a lot of chemical fertilizers. It produces a lot of starch, which brings out the flavor, and this starch is condensed at night.
